I DO SIMILAR WITH KENAI SOCKEYE SALMON EXCEPT I USE CAPERS SPRINKLED GENEROUSLY OVER THE FILET.
ABOUT HALF WAY THROUGH THE PROCESS I SPRINLLE SMALL AMOUNT OF CAPERS JUICE OVER THE FILET.
THE CAPERS JUICE CUTS THROUGH THE WILD TASTE OF THE FISH.
